Today on our Cooking with Timescertification, I'm sharing my family’s favorite meal over the years with some fun trials and learning curves along the way.
To begin, I thought it would be fun to mention the first time I cooked this meal as an adult. You see when I was in my early 20's I was dating my now husband with two small kids. I couldn't wait to attempt making dinner for them. I googled a few recipes of how to make Chicken & Dumplings. Let's just say, it turned out ok on that first trial and little peppery and they all did the their best to make me feel ok while trying to swallow it down.
Another memory, fast forward, we are married now and eating Chicken & Dumplings together and our oldest son was eating a dumpling, he got up from the table and walked towards his room and my daughter got up to check on him, we all thought that was a little strange, and as she got up to check on him, he came back to the table and was choking on the dumpling, and our daughter gave him the heimlich maneuver and we were all glad he's was ok. We still talk about that even today, even laugh how he got up when he was in danger vs staying so we could help him. If you are choking never walk away! Signal you are in need of help.
I'll make this meal to bring over to my oldest and her family or when our oldest son comes over for dinner, we often have this meal, and now our youngest has added this to his favorite rotation of Chicken & Dumpling and Spaghetti. Glad I have two options with that boy!
I love this meal so much because it's so wholesome and has many more family dinner memories of sitting around the table and sharing this or that about the day.
The reason I also wanted to share this meal with you, I often get asked about this recipe on social media when I post photos or share via stories over the years, so thought it would be fun to share it here, with our Cooking with Timescertification.
4 cups of water
4 chicken breast
2-3 chicken bouillon cubes
salt & pepper to taste ^ I use a good bit of pepper
1 (10.5 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can condensed cream of chicken soup
Make your dumplings
2 1/2 cups Original Bisquick™ mix
2/3 cup milk
I boil my water, add the bouillon cubes to the boiling water along with salt & pepper. Once the water is boiling, I will add my chicken, I prefer the breast but you're welcome to add more of the chicken. Once the chicken is cooked, I remove it and whisk in the soups till they are mixed in really well. From there, I shred the chicken and add it back to the pot and bring back to a boil.
I add the Bisquick and milk together to create my dumpling mix, I use a tablespoon to scoop out and drop into the boiling water. I use the spoon to push down the dumplings so they go into the water and repeat till I have no mix left over. If I want more dumplings, I will repeat that step. Make sure all of your dumplings on top have gone under the water some and then put your pot on simmer and cook.
Total cooking time is around an hour to an hour and a half. If you fill like your gravy mix (water, soup, chicken) is a little to watery, take some out and add a little bit of cornstarch.
